What dirty said. Have fixed them smoked and fried. When I read about farmed salmon and what they are fed and the majority of seafood in the grocery comes from China and Vietnam I have no problem eating great lakes fish.

I have smoked them and they are good to me. I also like to cut them up into nuggets and deep fry them.

Back when we used to keep a couple. I'd bring them home and put them under my tomato plants. Man they grow like crazy. LOL. I tried to smoke them once but I had so much geese inside my smoker I have done any since. We don't fish for them in years now but we do catch them from time to time. We release them now a days. For people that only fish once or twice a year they are great fun and for some the biggest fish they have ever caught. So you all can have them. Just my thoughts.

Chunk them up and do a boil with them. Redskins, onions, corn on the cob, shrimp, garlic. Throw it all together with a good crab boil seasoning. Cooks the grease right out of them. Good stuff.
