hands down the best:  bluegill and crappie through the ice. tastes like candy

For Lake Michigan, I personally rank them:

1. Perch (a lot of work, but so tasty)
2. Coho (agree springtime fish are the best)
3. Steelhead (grilled or baked)
4. Kings
5. Lakers
